Why Harkara.

A harkara was the royal messenger: the runner who carried word between cities, unopened and unchanged. Somewhere between the kitchen and your table, food lost its messenger. We brought him back.

We read the label on a ₹20 biscuit, then eat a ₹1,000 dinner knowing nothing about it: which oil, whose dairy, how fresh. Nutrition labels became normal for packaged food. We think restaurants are next. On Harkara, kitchens declare what goes into their food, and every order is a vote for knowing.
